In a large mixing bowl, whisk the water, flour, eggs and salt together. Cover with plastic wrap and refrigerate for at least 30 minutes or overnight.

Before cooking, whisk 30 mL of olive oil into the batter. Heat up a non-stick pan over medium-high heat. Pour a ladleful of batter into the pan and swirl the pan around to ensure that the batter spreads evenly. Pour any excess batter back into the bowl. Cook for about 2 minutes on one side and 1 minute on the other side. Transfer the cooked galette onto a plate and keep it covered under tin foil.

The first one will most certainly break, but keep going until you get the hang of it. Repeat this process until all the batter is used.

Wipe the pan clean with a paper towel and heat it up again over medium heat with ½ tbsp. of olive oil. Add the garlic and sauté for 1 minute until softened. Add the spinach, then season with salt and pepper. Cover the pan with a lid and cook for 30 seconds until it is fully cooked.

Heat up another clean pan with 1 tbsp. of olive oil and fry the eggs. Season with salt and pepper. Fill two galettes with spinach and goats cheese. Place 1 egg in the center of each galette and fold the edges over, making a square. Serve immediately with a side salad.

TIP: Galettes keep well in the refrigerator in plastic wrap, and they are very handy for a quick breakfast or lunch! To reheat them, cover them with tin foil and pop them into the oven at 180°C/355°F for about 5 minutes until they are warm and soft.
